  2. Place the salt crackers in a resealable plastic bag and crush them with a rolling pin until finely crushed.
  3. In a bowl, mix the crushed crackers, flour, potato flakes, seasoned salt, and black pepper.
  4. In another bowl, beat the egg.
  5. Dip each chicken breast into the egg, then coat with the cracker mixture.
  6. Heat the vegetable oil in a large skillet over medium heat.
  7. Fry the chicken breasts for about 5 minutes on each side or until golden brown and cooked through.
  8. Transfer the fried chicken to a baking dish and bake in the preheated oven for 10 minutes to ensure they are cooked through.
